Carnevale (in latin, carne vale, meaning “farewell to meat”, a tradition since the 13th centrury, is a month-long celebration preceding Lent. In Catholic and Christian tradition, Lent is a time of fasting and solitude before Easter.

The Venice carnival was a magical time for everyone and involved the entire city. It broke all the rules of society and gave the average man the chance to lose himself in excess and celebration.  In fact, the tradition of masks evolved to hide one’s identity and allow more guilt-free revelry.

The most practiced and desired form of excess during Carnevale is an abundance of food.  Gnocchi, lasagna and tortellini are the most traditional dishes. However, sweets are the most treasured indulgence.  Frittelle di carnevale (carnevale fritters) and frappe (fried ribbons) are two of the most famous.
